Summer Vegetables


Rainbow carrots and beetroot

After what has been a difficult year for seed germination, we finally have some decent root vegetables. We always grow the 'Rainbow Mix' carrots because they a very resistant to carrot fly without compromising on the flavour. The children are particularly fond of the colour variety.
Beetroot is an absolute favourite in our house. I love its sweet, earthy flavour and it's soft, comforting texture. We eat it in salad, soup, stews, roasted, grated, in pies and pickled.
I have just been and picked this out of the garden. With just DB and I for tea I am wondering what to make...risotto? Potatoes on the side for my little four year old potato monster.
